Why Coffee Prices Are Rising—And What It Means for Quality, Taste, and the Future of Specialty Coffee

If your daily cup feels more expensive lately, you are not imagining it. Coffee prices have been unusually volatile, and the reasons go far beyond what shows up on a café menu.

In January 2026, the International Coffee Organization's Composite Indicator Price averaged 296.89 US cents per pound, down 2.6% from December 2025, but still at historically elevated levels after a turbulent 2025. Earlier monthly averages in 2025 were also exceptionally high, including 354.32 cents/lb in February 2025 and 330.44 cents/lb in November 2025.

For coffee drinkers, that matters because price pressure affects nearly everything: green coffee buying, roast decisions, café pricing, RTD margins, and even which origins stay visible on shelves. For specialty brands, it also creates a bigger challenge—how to preserve quality while keeping coffee accessible.

Why prices moved so much

Coffee pricing has been influenced by supply concerns, producer selling behavior, exchange-stock tightness, and weather developments in Brazil. The ICO noted that certified exchange stocks remained historically low in January 2026 at roughly half of five-year average levels, which helped support elevated prices even as the market softened late in the month on improved rainfall news in Minas Gerais.

Trade flows have shifted too. In December 2025, global green bean exports rose 9.2% year over year to 10.15 million bags, but Arabica's share of total green bean exports for the first three months of coffee year 2025/26 fell to 64.1% from 67.4% a year earlier, showing how the market mix is changing.

Why this matters to specialty coffee

Specialty coffee is growing at the same time the market is becoming harder to navigate. That growth creates opportunity, but it also raises expectations. Today's coffee drinker is not just buying caffeine; they are looking for quality, transparency, preparation craft, and increasingly, alignment with health and lifestyle values. In the same 2025 specialty coffee breakout findings, 61% of specialty coffee drinkers said they believe coffee is good for their health.

The consumer is changing too

Coffee demand is not only growing; it is changing shape. Specialty coffee drinkers are more likely than traditional coffee drinkers to get coffee prepared out of home, with 35% of past-day specialty drinkers doing so compared with 20% of traditional coffee drinkers, though home preparation still dominates overall behavior.

Younger consumers are also reshaping menus. Reporting on Gen Z coffee behavior in 2025 highlighted strong demand for cold, sweet, and customized drinks, with about 85% of Gen Z coffee fans adding creamer compared with 70% of coffee drinkers overall.

What this means for your cup

When prices rise, some brands respond by lowering quality, blending more aggressively, or reducing transparency. Better specialty brands respond differently: they educate customers, refine offerings, and focus on roast and sourcing choices that still deliver character in the cup.

That is one reason medium roast deserves more attention right now. Among past-day specialty coffee drinkers, medium roast was the favorite roast type for 62%, and that figure was reported as up 35% since 2020, suggesting consumers want balance and clarity rather than just intensity.

Where coffee is heading next

One major growth lane is ready-to-drink coffee. Market research and industry reporting in 2025 pointed to continued RTD expansion, with one analysis projecting the category to reach $64 billion by 2032 while also warning that higher arabica costs are putting serious pressure on canned coffee margins.

At the same time, specialty coffee is becoming more culturally diverse in how it is consumed. Espresso drinks, cold brew, nitro, and premium at-home brewing are all part of the same broader shift: consumers want convenience, but they do not want boring coffee.
