Brew Guide

Drip / Auto Brewer

• Dose: 22 g coffee
• Water: 350 g water (1:16)
• Grind: Medium
• Temperature: 200°F / 93°C
• Time: Approximately 5-minute cycle

1. Use a paper filter, rinsed if your machine allows a pre-wet.
2. Grind medium, roughly a table-salt texture.
3. Brew a full cycle and stir the carafe once before pouring.
4. Hold on a warm plate for no longer than 20 minutes.

Tip: Built for the pre-dawn pot, it holds structure black at 5 a.m. and still takes cream on the refill.

French Press

• Dose: 30 g coffee
• Water: 450 g water (1:15)
• Grind: Coarse
• Temperature: 200°F / 93°C
• Time: 4-minute steep

1. Add coffee, pour all water, and start the timer.
2. At 1:00, break the crust and stir gently.
3. At 4:00, press slowly—never force it.
4. Decant immediately to stop extraction.

Tip: Decant the whole press right away; smoked chocolate turns bitter if it sits on the grounds.
